We use a stone mill in short runs (small batches), meaning our mill doesn’t heat up, and our flour retains its nutrients.
All of our grains are certified organic, and we use organic practice also in the milling process. No added chemicals, pesticides, etc. No glyphosate. Just grain.
Our grains come from the Midwest, primarily from Michigan.
Our aim for our baked goods is health and digestibility. We want you to feel good after you eat it, and for your gut to be happy too.
We always use flours that are either organic, or are milled from certified organic grain. Our other ingredients (like add-ins, oils, etc.) are usually also organic.
As we grow, we would like to use all freshly-milled flours milled from heritage wheat varieties and ancient grains.
We operate our bakery under the Michigan Cottage Foods Law.
